Bean Cake Recipe ...say what?  I know what you are thinking: "that sounds gross", but it is so so good (and a great way to add some fiber to your diet)

The Best Bean Cake Recipe You
​Will Ever Try!

I love this recipe as it tastes great and it is an easy way to get beans into your diet.  Beans are high in fiber as well as nutrients and vitamins; plus, you can chose whatever type of beans you like - they are all great.  Just remember to soak the beans over night, drain, and then boil to remove any toxins.

  • ~1.5 cup cooked pinto beans (any will work,)
  • ~2/3 cup rolled oats, oat bran, or quinoa flakes
  • ~3/4 cup mashed cooked sweet potato or yam
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • stevia (sweetened to taste)
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 2 tsp vanilla extract
  • 1/2 cup chocolate chips
Mash the beans until soft.  Mix everything into the beans (except the chocolate chips).  Line or grease your pan then spread the batter. Sprinkle the chips on top and bake for ~30-40 min checking periodically.  It is a soft cake so don't expect it to get super dry.   I find this recipe super forgiving so I never measure I just throw all the ingredients in tasting as I go.  
Store in the refrigerator after it has cooled.
